Aragon stretches from the snow topped Pyrenees in the north to the sun baked lowlands of Teruel in the south, with the Ebro Valley running through its middle like a green ribbon. The landscape shifts from alpine meadows and glacial lakes to arid steppe within a single afternoon's drive. It is one of the least densely populated regions in western Europe, which means you can hike for hours without seeing another soul.
Nearly half of Aragon's population lives in Zaragoza, a city that punches well above its weight. The Basilica del Pilar dominates the riverbank, Moorish architecture fills the Aljafería Palace, and the tapas scene holds its own against anywhere in Spain. Beyond Zaragoza, Huesca and Teruel offer the kind of calm that big city travellers dream about, with Mudéjar towers, empty plazas, and restaurants where the waiter remembers your name.
Aragonese cooking is mountain food at heart: hearty, unpretentious, and built around whatever the season delivers. Ternasco (young lamb roasted until the outside crackles) is the signature dish, but the region also turns out superb cured meats, migas made from breadcrumbs fried with garlic and chorizo, and borrajas, a thistle vegetable you will not find anywhere else. The wines from Cariñena, Somontano, and Campo de Borja are finally getting the attention they deserve.
Aragon was once the heart of a Mediterranean empire, and traces of that grandeur remain in Romanesque churches, hilltop castles, and the Mudéjar architecture that earned UNESCO World Heritage status. The Ordesa y Monte Perdido National Park is one of the oldest in Europe, and the ski resorts of Formigal and Cerler draw winter visitors from across the continent. In summer, the Pyrenean valleys fill with wildflowers, and the night skies above Teruel are among the darkest in Spain.
